The biggest caviar producer is now Iran which exports every year more than 300 metric tones of it.It is followed by Rusia,that makes a lot of profit from the caviar productions.These countries have the biggest number of caviar farms where the process of producing it involves extracting the caviar from the sturgeon by surgical methods,which helps to female staying alive and producing more eggs in the future.This is a measure used due to the decreasing number of the sturgeons in the last few years.
